These are the Weschenfelder 50/55 beef middle casings. They comes salted in a vacuum pack. Each pack contains 9 metres and they are Ideal for making all sorts of charcuterie including salami.
These are the 50/55 natural Beef Middle casings and are used as a traditional casing for Salami, Cornish hog's pudding, or Cervetlat. This is a straight casing with no curve, making it easier to hang and more space-efficient.
They come in metre packs, which will produce 9kg (20lb) of sausage. Our Beef casings are specifically imported from South America with the beef middles being of Uruguayan origin. The beef middles are strong-walled and easy to use for an array of air-dried products.
These casings come vac-packed and preserved in salt. We recommend they are stored in a sealed 'Tupperware' type container in a fridge, where they will keep for at least 3-4 months. Before use, they need to have the salt rinsed from them and then soaked in warm water for at least 1 hour or preferably overnight prior to use.
