Traditional HUKKI casing are a synthetic non-edible plain casing with an old-world look. Almost transparent they have high permeability lending themselves to air, smoke and water vapour accelerating the curing time and helping to create an excellent-tasting product.
Hukki casings produce all kinds of dry sausage i.e. air dried, smoked and salami. These casings have a 112mm diameter and length of 75cm. This size of Hukki casings is best suited to making products such as mortadella. Each pack contains 25 casings with one end clipped and looped for easy filling and hanging.
To use Hukki casings briefly dip them into cold water with a 10-15% salt water solution.
