 Toulouse sausages are a classic ingredient in cassoulet, that hearty bean, confit and pork casserole that is a hallmark of any self-respecting French cook’s repertoire. Or simply pan-fry or grill in the oven. We love these sausages for breakfast.

The Toulouse sausage seasoning is a bespoke blend by Leonards using a French family recipe. It produces a typical fresh herby sausage with a kick from the black pepper and garlicky notes running through it. This pack of seasoning includes all you need apart from the meat and no rusk is required to make an authentic Toulouse sausage.

Simply Use at a rate of 25 grams per kg of meat. Your meat needs to contain 30 to 35% fat for the Toulouse sausage to be nice and succulent. Mix the seasoning at 2.5% with the meat, and add 2% water before filling into casings.

For an authentic Toulouse sausage, fill into sheep casings.
